Huesca's covered municipal market, tucked just off Calle del Coso, is where local chefs and home cooks converge each morning to source the produce that makes Aragonese cuisine so quietly exceptional. What to Buy and Taste
The market is the best place in the city to find longaniza de Graus sausage, a paprika-laced pork delicacy unique to the Huesca province. Several charcuterie stalls offer thin-sliced samples alongside aged cheeses from the Hecho and Ansó valleys.
In autumn, the truffle and wild mushroom section expands dramatically — vendors sell black truffles by weight and rovellón (saffron milk cap) mushrooms by the basketful at prices far below what you'd pay in Barcelona or Madrid.

The busiest and most atmospheric session runs Tuesday, Thursday and Saturday mornings from around 8:00 to 14:00, when farmers from surrounding villages set up temporary stalls in the adjacent square.
