Housed in a Belle Époque casino building on the Paseo de la Independencia, Lillas Pastia has held a Michelin star since 2000 and remains the most compelling argument for sitting down to a long lunch in Huesca. Chef Carmelo Bosque champions hyperlocal Aragonese ingredients — Pyrenean lamb, Benasque trout, Somontano truffles — with a technique that is refined without ever being showy.
What to Order
The tasting menu changes with the seasons but almost always features some form of the house lamb — typically Churra Tensina breed from high Pyrenean pastures — cooked with a precision that makes you question every lamb dish you've eaten before.
The truffle-laced egg dishes that appear in winter are legendary among Huesca regulars: a simple fried egg elevated by shaved black truffle and Somontano olive oil becomes something close to transcendent.
The Room and the Atmosphere
The dining room retains its original early-20th-century woodwork, stained glass and tiled floor — eating here feels like dining inside a living piece of Aragonese cultural history rather than a modern restaurant.
Service is warm and knowledgeable without being stiff; the sommelier's knowledge of Somontano DO wines is exceptional and the list is priced far more fairly than you'd expect for a Michelin-starred house.
