What to Order
Start with the gazpacho manchego — not the cold tomato soup of Andalusia, but a thick, meaty stew of game (rabbit and partridge are typical) folded through unleavened torta bread, scented with rosemary and saffron. It's the defining dish of the region and Casa Elías makes one of the most faithful versions in the province.
Follow with migas hellinas — breadcrumbs fried with chorizo, bacon and paprika until crisp and golden, served with a fried egg and pickled peppers on the side. It sounds simple; it tastes like the best possible version of peasant cooking elevated by quality ingredients.
Local Wines and Sweets
The Almansa DO wine region begins just 40 km east of Hellín, and the restaurant stocks a well-chosen list of its bold Garnacha Tintorera reds — structured, dark-fruited wines that stand up to the gamey stews without overwhelming them. Ask the waiter for a half-bottle recommendation if you're eating alone.
Finish with bizcochada, a local sponge soaked in anise liqueur and dusted with cinnamon — a dessert so specific to Hellín that you'll struggle to find it anywhere else. The town's pastelería on Plaza de la Constitución also sells it boxed to take home.
