Porchetta di Ariccia Stalls on Via Tiburtina
The Via Tiburtina corridor running through Guidonia is one of the great porchetta roads of Lazio, lined with family-run fraschette and roadside vans selling whole roasted pigs fragrant with rosemary, garlic and black pepper. This is the real, unglamorous version of a Roman institution — eaten standing up, wrapped in paper, with a quarter-litre of house white.
What Makes Tiburtina Porchetta Special
The pigs are sourced locally from farms in the Tivoli hinterland and roasted overnight in wood-fired ovens; by mid-morning the vans open and the scent of crackling hits you from 50 metres away.
Order a panino con la porchetta — a crusty rosetta roll stuffed with thick-cut slices — and specify 'con la cotica' if you want crackling included. You do.
Where to Stop
Look for the established fixed stalls near the Guidonia Montecelio municipal area along Via Tiburtina; several have been operating for decades and are identifiable by the whole pig displayed in the window.
Locals pick up a kilo or two on Saturday mornings to bring to family lunches — joining that queue is the surest sign you've found the right place.
Pairing and Etiquette
A plastic cup of Frascati or Castelli Romani white wine is the traditional accompaniment; many stalls sell it by the glass for under two euros.
Don't expect seating or menus — this is counter culture at its most honest, and that's exactly the point.
