Casa Paulino

A family-run asador that has been feeding Getafe for generations, Casa Paulino is the kind of place where the tablecloths are paper, the wine comes in a clay jug and the roast lamb arrives from a wood-fired horno smelling of thyme and charred bone. This is old Castile on a plate, and it is magnificent.

What to Order

The cochinillo asado — suckling pig roasted until the skin shatters like caramel — is the dish that regulars drive from central Madrid specifically to eat. Order it for two, ask for extra bread and do not make plans for the afternoon.

If you visit on a Sunday, the cocido madrileño is the weekly special: a three-course chickpea stew served in the traditional order of broth, then vegetables and chickpeas, then meat. It is slow, generous and deeply comforting.

The Atmosphere

The dining room is loud with the specific music of Spanish Sunday lunch — overlapping conversations, the clatter of clay cazuelas, children running between tables while grandparents argue cheerfully about football.

Service is brisk but warm in the way that only a restaurant run by the same family for decades can be. The owners know their regulars by name and will look after a stranger just as well.
