Es Molí de Sal Restaurant
Sitting on the edge of the Ses Salines salt flats with pink flamingos visible from your table and the smell of wild herbs drifting in from the scrubland, Es Molí de Sal is the kind of restaurant that makes you forget about the rest of your itinerary. The cooking is rooted in Ibizan-Formenteran tradition with a confident modern hand.
The Food
The menu leans heavily on the sea: bullit de peix (the traditional Balearic fisherman's stew of whole fish, potatoes and saffron broth) is the dish to order if it appears on the daily specials board. Grilled red prawns from Denia, locally caught sea bass with island salt and almond-crusted flaó dessert round out a meal that tastes specifically of this island and nowhere else.
Portions are generous and the wine list includes bottles from the small but growing Ibizan wine scene alongside a solid selection of Spanish whites — a chilled Albariño or a Galician Godello pairs beautifully with the seafood.
The Setting
The restaurant occupies a restored salt-worker's house beside the old windmill (molí) that once ground grain for the salt workers' community. The terrace faces west across the flat water of the salt pans, making it one of the few places on the island where you can watch the sunset while seated at a proper dinner table.
Flamingos are a near-constant presence from March through October, stalking the shallow pink-tinged water just metres from the terrace railing. It is a surreal and beautiful backdrop that no amount of Instagram filters can improve upon.
