Restaurant La Barbacane
Tucked into the old town just a stone's throw from the château rock, La Barbacane is the kind of honest, ingredient-led restaurant that makes you want to move to the south of France permanently. The menu pivots with the seasons and leans hard on Ariège producers.
What to order
The cassoulet de l'Ariège — a leaner, more herb-forward cousin of the Toulouse version — is the dish regulars return for, built around local white beans and duck confit from farms in the Couserans. In autumn, cèpe mushrooms from the nearby forests appear in everything from the amuse-bouche to the main.
For dessert the pastis gascon, a paper-thin apple tart perfumed with Armagnac, is a regional classic done properly here — flaky, buttery and not overly sweet. Pair it with a glass of Jurançon moelleux from just over the Pyrenean border.
The atmosphere
The dining room occupies a vaulted stone space that keeps the room cool in summer without feeling cold. Tables are close enough to overhear your neighbours' meal recommendations, which is usually how you end up ordering better than you planned.
Service is relaxed but attentive in the French provincial way — nobody rushes you, the wine list is annotated with the owner's own tasting notes and the cheese trolley arrives with genuine enthusiasm.
