Marché de Foix (Friday & Saturday Market)
Twice a week the Place Saint-Volusien and surrounding streets fill with the colours and aromas of one of Ariège's liveliest markets. Local farmers, cheesemakers and charcutiers set up stalls that showcase the honest, mountain-inflected produce of the region.
What to look for
Arrive before 9 am on a Friday or Saturday and you will find wheels of fermier tomme des Pyrénées alongside runny, pungent brebis cheeses wrapped in cloth. The charcuterie stalls groan with saucisson sec, jambon de montagne and rillettes d'oie — all made within a short drive of town.
Seasonal vegetables from the Ariège valley floor are exceptional: fat white asparagus in April, wild cèpe mushrooms in autumn, and purple-streaked Toulouse violets in late winter. A handful of stalls sell jars of local honey, walnut oil and artisan confiture that make perfect lightweight souvenirs.
Eating and soaking up the atmosphere
Several stalls sell hot food to eat standing up — look for the rotisserie chickens basted in duck fat and the paella pan that feeds what seems like half the town. Pair a paper cone of olives with a glass of Côtes du Roussillon from the wine merchant at the corner of Rue des Marchands.
The market winds down by noon, so combine it with a coffee at one of the café terraces on Place de la Bourse and watch Foix go about its morning. The Saturday market is larger and draws producers from further afield in the Ariège department.
