What to Order
The tasting menus change with the tides and the seasons, but expect dishes built around Cotentin lamb from the salt-meadows (pré-salé), locally dived scallops from the Bay of Seine and vegetables from the peninsula's sandy market gardens. The cheese trolley, loaded with Norman rarities, is not optional.
Marion's technique is classically rooted but never dusty — a langoustine from Barfleur might arrive with a bisque so concentrated it tastes like the sea distilled, while the desserts lean into Normandy's apple and cream obsessions without cliché.
Practical Details and Booking
The restaurant seats only around 25 covers, so booking several weeks ahead is essential in summer. The lunch menu offers exceptional value for Michelin-starred cooking — a three-course lunch on a weekday is a fraction of the dinner tasting-menu price.
The wine list has a strong Loire and Burgundy bias, and the sommelier is happy to suggest a local Calvados pairing for the cheese course, which is the most Norman thing you can possibly do.
