A Kitchen Rooted in the Castelsardo Sea
Founded by Renato Pinna, Il Cormorano built its reputation on a simple principle: let the waters of Castelsardo speak for themselves. The menu pivots with the seasons and the daily catch, producing dishes that combine Sardinian tradition with refined contemporary technique — think aragosta alla castelsardese (Castelsardo-style spiny lobster) and silky seafood pastas built on brodetto reductions.
The restaurant is particularly celebrated for its lobster pasta, a dish that has become something of a pilgrimage item for food-focused visitors to northern Sardinia. Portions are generous, plating is elegant, and the ingredients are unambiguously local.
The Setting and the Cellar
The dining room occupies a warm, old-world interior steps from Piazza della Misericordia, with a terrace that puts the castle walls within arm's reach. The atmosphere is unhurried and genuinely welcoming — the kind of place where a two-hour lunch feels entirely reasonable.
The wine list runs to over 300 labels, with strong representation from Sardinian producers including Vermentino di Gallura DOCG and Cannonau di Sardegna — ask the sommelier to match a local white to whatever crudo or pasta you order.
What to Order
Start with the antipasto di mare — a rotating selection of raw and lightly dressed seafood that showcases whatever arrived at the port that morning. Follow with a pasta course (the spaghetti all'aragosta is non-negotiable if it's on the menu) and finish with seadas, the classic Sardinian honey-drizzled fried pastry filled with fresh pecorino.
Book ahead in July and August; the restaurant fills quickly and walk-ins are rarely accommodated at dinner during peak season.
