Restaurante El Tolmo — Alcarria Cuisine in the Old Town

Tucked into a stone-vaulted dining room just off the Plaza de la Constitución, El Tolmo is Brihuega's most respected restaurant for traditional Alcarria and Manchego cooking, the kind of place where the roast lamb has been slow-cooked in a wood-fired horno since dawn and the honey on the dessert board comes from hives on the plateau above town.

What to order

Start with a plate of migas de pastor — shepherd's breadcrumbs fried in pork fat with chorizo, bacon and a fried egg — which is as hearty and warming as Castilian food gets. Follow it with the lechazo asado, milk-fed lamb roasted in a clay pot until the skin crackles and the meat falls from the bone with the gentlest nudge.

The house dessert is a simple but perfect combination: fresh sheep's milk cheese drizzled with Miel de la Alcarria, the protected-designation honey produced in the hills around Brihuega. It is floral, runny and unlike any supermarket honey you have tasted.

Drinks and local wine

Ask for the wine list's local section, which features bottles from the Mondéjar DO — a small, underrated Castilian appellation producing earthy Cencibel (Tempranillo) reds at very fair prices. A carafe of the house red with the lamb is an entirely satisfying and inexpensive choice.

If you are driving, the locally produced lavender lemonade served in summer is a refreshing and genuinely delicious non-alcoholic option that you will not find anywhere else.

Practical details

El Tolmo is open for lunch daily from 1:30 p.m. to 4 p.m. and for dinner Friday and Saturday from 8:30 p.m. Reservations are strongly recommended on summer weekends and essential during the lavender festival week in July.

The dining room seats around 40 and fills with a mix of local families and Madrid day-trippers. Prices are very reasonable by any standard: a full three-course meal with wine rarely exceeds €30 per person.
