Finsterwirt Restaurant
Tucked inside a vaulted medieval building on Vicolo del Duomo, Finsterwirt has been feeding Bressanone locals since the 13th century, making it one of the oldest continuously operating restaurants in the entire Alpine region. The cooking is proudly rooted in South Tyrolean tradition — no fusion detours, no apologies.
What to Order
Start with the Speckknödel — a dense bread dumpling studded with locally smoked Alto Adige speck, served in a clear beef broth that has been simmering since morning.
Follow it with Schlutzkrapfen, the region's answer to ravioli: thin rye-dough half-moons filled with spinach and sheep's ricotta, finished with brown butter and a snowfall of aged Graukäse.
The Wine List
The cellar runs deep on South Tyrolean labels — ask for a glass of Kerner from the Eisacktal valley, a floral white grape that grows almost exclusively in the vineyards you can see from the restaurant window.
The house Lagrein, a dark and slightly smoky red native to the region, pairs perfectly with any game dish on the seasonal menu.
Atmosphere and Booking
The dining rooms occupy a series of low stone-vaulted chambers; in winter a wood-burning Kachelofen (tiled stove) keeps the temperature just right for lingering over dessert — try the Krapfen filled with wild blueberry jam.
