Spiedo Bresciano at Trattoria Rigoletto
Spiedo Bresciano — a slow-turning spit of chicken, pork ribs, potatoes and sage butter, cooked for up to eight hours — is the defining dish of Brescia and Trattoria Rigoletto on Via dei Musei is one of the oldest and most respected places to eat it. This is not a dish you rush; it arrives in a cast-iron pan still sizzling.
The dish itself
The secret of a proper spiedo is lard-basted layers: each piece of meat is separated by sage leaves and slices of lardo, then rotated slowly over a wood fire until the outside caramelises and the inside stays impossibly juicy.
A full spiedo portion is genuinely enormous — a sharing plate for two is the practical choice unless you arrive very hungry after a morning on the castle hill.
The trattoria experience
Rigoletto is a no-frills room of checked tablecloths and framed football scarves, the kind of place where the owner recites the daily specials from memory and the house Franciacorta is poured without ceremony into tumblers.
