Rifugio Burz
Perched on the slopes directly above Arabba village on the Porta Vescovo ski area, Rifugio Burz is the kind of mountain hut that makes you deliberately slow down your ski run so lunch lasts longer. The kitchen is rooted in Ladino mountain cooking — polenta, venison ragù, barley soup and the best kaiserschmarrn (shredded caramelised pancake) for miles around.
What to Order
Start with a bowl of 'minestra d'orzo', the Dolomitic barley and vegetable soup that has fuelled Alpine farmers for centuries — thick, smoky from speck, and deeply restorative after a cold morning on the pistes.
For a main, the venison goulash served over soft polenta is a house signature; the meat is sourced from local hunters in the Livinallongo valley. Finish with kaiserschmarrn dusted in icing sugar and accompanied by a small glass of grappa from the Nonino distillery in Friuli.
Atmosphere and Access
The terrace faces south-west, meaning it catches full afternoon sun even in December; the wooden benches fill quickly after midday, so arrive by 12:15 to secure a table with a view over the village rooftops and the Marmolada glacier.
In summer the rifugio is reachable on foot in about 45 minutes from Arabba on a well-marked trail (Trail 244), or by gondola and a short walk. It also serves as a handy waypoint on the Sellaronda hiking circuit.
