What Makes It Different
Unlike industrial mozzarella, the fior di latte produced in the Monti Lattari area uses raw milk — some from prized Agerolese cows, the rest from Frisians — and allows the curd to sour naturally for a full 12 hours before stretching. This slow process gives it a distinctively fresh, milky aroma and an elastic, ivory-white body that melts differently on a pizza than anything else.
The production cycle concludes with mozzatura, the skilled nipping of lumps between thumb and index finger to shape each ball — a gesture so practised it looks effortless, yet takes years to master.
Where to Taste It
Agerolatte, guided by five generations of the same family since Onofrio Medaglia began selling cheese to Naples by horseback in the late 19th century, produces fior di latte, ricotta, smoked provola and aged caciocavallo. Fior d'Agerola (fiordagerola.eu) is another historic dairy whose aged Provolone Cantina Fusco is a standout from the Lattari Mountains.
Several dairy farms in Agerola welcome visitors for tastings and even hands-on mozzarella masterclasses — the best way to taste fior di latte is to buy it directly from the producer, still warm.
Beyond the Cheese Counter
Pair your cheese haul with a Tarallo di Agerola — a fennel-flavoured biscuit shaped like a doughnut or braid, with a butter-and-almond variant — or the local Pane Biscottato, twice-baked whole-wheat bread that locals soak briefly in water and top with tomato and olive oil like a mountain bruschetta.
For a full sit-down meal, La Dolce Vista and Zi' Carmine (rated 9.3 on TheFork) are two well-regarded local restaurants where fior di latte features across the menu, from antipasti through to wood-fired pizza.
