Le Clapier Restaurant

Tucked into a vaulted stone cellar on Rue des Gros Degrés in the old town, Le Clapier serves some of the most honest Lorraine cooking in Verdun — think rabbit terrine with mirabelle mustard, pike-perch from the Meuse and a quiche Lorraine that would shame most Parisian brasseries.

What to Order

Start with the terrine maison, a thick slab of coarsely textured country pâté served with cornichons and warm sourdough — it arrives with a small pot of mirabelle chutney that elevates the whole thing. The wine list leans on Côtes de Meuse rosé and Alsace Pinot Gris, both excellent matches for the rich, butter-forward mains.

The sandre (pike-perch) fillet poached in Riesling with creamed leeks is the dish that keeps locals coming back. It is delicate, seasonal and changes slightly depending on what the fish market on the Meuse delivers that week — a quality indicator you can taste.

The Setting

The dining room occupies a medieval cellar with bare stone walls, low arched ceilings and candlelight that makes every plate look like a still life. It seats around 40 covers, so booking ahead on weekends is essential — the locals know this place well.

Service is unhurried and knowledgeable; the staff can explain the provenance of almost every ingredient on the plate. It is the kind of restaurant that reminds you why French regional cooking is a UNESCO-recognised cultural heritage.
