Osteria alle Testiere
With only 22 covers squeezed into a narrow calle in Castello, Alle Testiere has been the most sought-after table in Venice since chef Bruno Gavagnin opened it in 1993. The menu changes daily based on what arrived at the Rialto that morning, and every dish is a precise, unfussy argument for why Venetian cuisine is among Italy's finest.
What to Order
Start with the marinated raw scampi drizzled with Sicilian olive oil and lemon — deceptively simple, startlingly good. The spaghetti with caparossoli (local clams) is the benchmark against which every other version in the city should be measured: no cream, no fuss, just clam liquor, white wine, garlic and the best pasta they can find.
For secondi, the daily fish changes but the preparation is always restrained: a turbot baked with capers and olives, or a whole grilled branzino with herbs from the Giudecca gardens. Desserts lean towards a silky saffron panna cotta or a sharp lemon sorbet — perfect after the intensity of the main courses.
Booking & Practicalities
Reservations are essential and must be made by telephone (no online booking); the restaurant fills up three to four weeks ahead in summer. They run two sittings — 19:00 and 21:15 — and the later sitting is marginally easier to secure.
The wine list is short but expertly chosen, leaning heavily on Friulian whites — a glass of Livio Felluga Friulano or a Soave Classico from Pieropan pairs beautifully with the seafood. Sommelier Luca Doná is happy to guide you if you describe your budget.
