Osteria alle Testiere
Tucked into a narrow calle in Castello, Alle Testiere is the restaurant Venetian food lovers name first when asked where they actually eat. Chef Bruno Gavagnin sources his menu daily from the Rialto market, the dining room seats just 22 people, and reservations are released weeks in advance — which tells you everything.
What to Order
The menu changes with the catch but recurring stars include schie con polenta (tiny grey lagoon shrimps on soft white polenta), spaghetti with cuttlefish ink, and whatever whole fish Bruno decides to roast that evening. The wine list leans into natural and small-producer Veneto labels that you won't find on any tourist-strip menu.
Save room for the desserts — the semifreddo changes seasonally and the selection of local cheeses with honey is a quiet masterclass in restraint.
Booking & Practicalities
The restaurant runs two sittings per evening (around 19:00 and 21:15) and one at lunch. Email reservations are accepted at info@osterialletestiere.it and the owners respond promptly. Book at least three to four weeks ahead in high season (May–October).
The address is Calle del Mondo Novo 5801, Castello — five minutes on foot from Campo Santa Maria Formosa. It has no sign visible from the street, which is part of the charm.
