Osteria da Carmelo — Radicchio & Risotto

Tucked on a side street near the Pescheria, Osteria da Carmelo has been serving the definitive risotto al radicchio di Treviso for over three decades — a dish that turns the city's bitter, ruby-red chicory into something silky, sweet and utterly addictive. This is the kind of trattoria where the daily menu is recited aloud and the house wine arrives in a ceramic jug.

The Dish You Must Order

Risotto al radicchio tardivo di Treviso is the house signature: Vialone Nano rice from the Po delta cooked slowly with shredded tardivo radicchio, a splash of local Raboso wine and finished with aged Montasio cheese instead of the more common Parmigiano. The result is a deep garnet-coloured risotto with a gentle bitterness balanced by the starchy creaminess of the rice — a flavour profile unlike any other Italian primo.

Between October and March, when tardivo is in season, the kitchen also offers radicchio grilled over charcoal as a contorno — the leaves char at the tips while the heart stays tender, dressed with nothing but extra-virgin olive oil and coarse salt from Cervia.

Other Veneto Classics

Beyond radicchio, the menu rotates with the seasons: spring brings risi e bisi (rice and fresh peas, looser than a risotto, thicker than a soup), summer offers bigoli in salsa with salted anchovies and onion, and autumn sees pasta e fagioli with borlotti beans from the Lamon valley. Secondi lean toward braised meats — the ossobuco with gremolata is reliably excellent.

The wine list is short but well-chosen, focused on Veneto DOC wines: Prosecco di Valdobbiadene for aperitivo, Colli di Conegliano Rosso or Raboso del Piave with the meat courses.

When and How to Go

Lunch is the main event here — locals pack the dozen or so tables between 12:30 pm and 2 pm on weekdays. Dinner is quieter and slightly more relaxed. Reservations are strongly advised for Saturday lunch, when the radicchio risotto can sell out before 1:30 pm.

Prices are honest by any standard: a full three-course meal with house wine rarely exceeds €30 per person, making this one of the best-value authentic lunches in the Veneto.
