Osteria a Le Due Spade
Founded in 1545 — the same year the Council of Trent was convening nearby — Le Due Spade is the oldest continuously operating restaurant in the city and one of the most historically resonant tables in the entire region. The cooking is rooted in Trentino mountain tradition but executed with a precision that earns it a consistent place in Italy's serious restaurant guides.
What to Order
Start with canederli in brodo — the region's signature bread dumplings, enriched with speck and chives, floating in a clear mountain-beef broth. They are simpler than they sound and more satisfying than almost anything else on a cool Trentino evening. Follow with strangolapreti, spinach-and-bread gnocchi tossed in brown butter and sage, which appear on the menu in a form little changed since the 16th century.
For a main course, the braised venison with mirtilli (bilberry) sauce and polenta is the dish that regulars return for. The wine list leans heavily on Trentino DOC labels — ask the sommelier for a Teroldego Rotaliano, the region's most distinctive red, grown on the gravel plain north of the city.
The Room and the Booking
The dining room occupies a vaulted medieval building just off Via Belenzani, with stone walls, low ceilings and candlelight that make the setting feel genuinely ancient rather than themed. Tables are small and close together, which encourages the kind of conversation with neighbours that Italian dining does best.
Reservations are essential, particularly Thursday through Saturday. Book at least a week ahead in summer and during the Christmas market season. The lunch menu is slightly shorter but better value, and the dining room is quieter.
