Sciatt e Pizzoccheri at Trattoria del Ponte, Sondrio

Valtellina has one of Italy's most distinctive regional cuisines — buckwheat-based, hearty and unapologetically alpine — and Trattoria del Ponte in central Sondrio is one of the most reliable addresses to eat it properly without theatre or inflated prices. The dining room is simple, the welcome is genuine and the portions are generous.

The Dishes You Must Order

Start with sciatt: crispy buckwheat fritters filled with melted Casera cheese, served on a bed of bitter chicory. The contrast between the crunchy shell, the oozing interior and the sharp leaves is one of those combinations that makes you understand why a cuisine survived centuries unchanged.

Follow with pizzoccheri: short buckwheat pasta ribbons slow-cooked with Savoy cabbage, potatoes, Casera and Valtellina Casera DOP, finished with sage-infused butter and a blizzard of aged cheese. It is dense, warming and completely unique to this valley — the recipe is protected by the Accademia del Pizzocchero di Teglio.

Drinking Local

Pair everything with a glass of Valtellina Superiore DOCG — specifically a Sassella or Grumello subzone wine, both produced from Nebbiolo grapes grown on the steep terraces visible from the restaurant window. These are serious wines: mineral, cherry-scented and built for food.

For dessert, ask for bisciola, a dense bread studded with dried figs, walnuts and raisins that is the valley's answer to panettone. A small glass of Sforzato di Valtellina DOCG passito alongside it is a combination locals swear by.
