Restaurant La Madeleine

What Arrives on the Plate
Chef Joëlle Voisin and her team build menus around whatever is at peak quality that week: Charolais beef aged and served with a bone-marrow gratin, Bresse chicken roasted under a crisp skin and finished with a Chablis cream sauce, river pike-perch from the Yonne prepared with butter and sorrel in the classic Burgundian manner.
Portions are generous without being theatrical. The cooking is confident and rooted — you will not find foam or nitrogen here, but you will find sauces that have been built with patience and fat that has been properly rendered.
The Wine List
The cellar is a particular strength, weighted heavily toward the Yonne appellations that most wine lists overlook in favour of the Côte d'Or. Irancy pinot noir, Épineuil rouge and the mineral whites of Saint-Bris-le-Vineux appear alongside the expected Chablis premiers crus, all at prices that feel honest for the quality.
Ask the sommelier to suggest a half-bottle pairing with the cheese course — the Soumaintrain with a demi-sec Auxerrois is one of those combinations that makes the region suddenly make sense.
Booking and Budget
Lunch is the smarter choice for value: the weekday formule déjeuner (two courses plus a glass of wine) typically runs €32–38 and represents one of the best-value Michelin-star lunches within 100 km of Paris.
Reservations are essential on weekends and strongly advisable on weekday lunches in summer. Book at least a week ahead via the restaurant's website or by phone.
