Le Vistaero Restaurant

Sitting at 300 metres altitude just below the medieval village, Le Vistaero earns its name — the terrace view sweeps from Cap Ferrat on the left to the Italian Riviera on the right, with Monaco's glittering towers directly below. The food matches the setting: refined Niçois and Mediterranean cooking that does not coast on the view alone.

What to Order

The menu leans on locally landed fish and Provençal vegetables, changing with the season. The bouillabaisse is properly made — saffron-rich, rouille on the side, not the watered-down tourist version — and the daube de boeuf niçoise slow-cooked in red wine is the kind of dish that makes you understand why French people eat lunch for two hours.

Start with the salade niçoise: the kitchen uses local anchovies, small black Niçoise olives and green beans cooked to the exact right firmness. It sounds simple; done correctly it is revelatory. Pair it with a glass of Bellet white wine from the hills above Nice, one of France's smallest and least-known AOCs.

When and How to Go

Book the terrace in advance — specifically request an outside table with a sea view when you reserve, or you risk sitting inside. Lunch is the better-value option; the set lunch menu (when available) offers two or three courses at a fraction of à la carte dinner prices.

The restaurant is reachable by car (parking available) or by the steep footpath up from the medieval village. Sunset dinner in summer is spectacular but book weeks ahead in July and August — this is not a secret among the French themselves.
