Ristorante Sa Corte Antiga
Tucked into a restored stone courtyard in the old centre of Orgosolo, Sa Corte Antiga serves the kind of Barbagia cooking that has barely changed in a century — roasted suckling pig, hand-rolled culurgiones and sheep's-milk ricotta that tastes of the mountain pastures just outside town. This is where locals celebrate, which is always the best endorsement.
What to Order
Start with a board of local affettati: salsiccia sarda dried over juniper smoke, lardo stagionato and paper-thin slices of prosciutto from the Barbagia highlands. Pair it with pane carasau, the crisp flatbread that shepherds carried for weeks on the mountain.
For a primo, order the culurgiones al pomodoro — Sardinia's stuffed pasta parcels filled with potato, pecorino and fresh mint, sealed with an intricate wheat-ear pleat. They are labour-intensive and deeply satisfying.
The secondi revolve around wood-roasted meats: porceddu (suckling pig) roasted on a spit over myrtle and olive wood is the centrepiece, its skin crackling and fragrant. Order it 24 hours ahead if you are visiting in low season.
Drinks and Ending Well
The house wine is a local Cannonau, the indigenous Sardinian red that pairs perfectly with the smoky, herb-scented meats. Ask for the sfuso (house carafe) — it is honest, unfiltered and very good value.
Finish with seadas: a warm fried pastry filled with fresh pecorino and drizzled with bitter corbezzolo honey. It is simultaneously dessert and a lesson in Sardinian culinary philosophy — simple ingredients, extraordinary result.
