Marché de la Place Saint-Roch
Every Tuesday and Saturday morning, Place Saint-Roch transforms into the beating culinary heart of the Landes, with farmers, cheese-mongers and foie gras producers spreading their wares under the plane trees. This is where locals actually shop, not a tourist performance.
What to Buy and What to Eat on the Spot
The Landes is one of France's premier duck-producing regions, so expect stalls piled with magret, confit, rillettes and whole lobes of fresh foie gras at prices that will make you wish you had a bigger suitcase. Local producers also bring in asparagus in spring, cèpe mushrooms in autumn, and Dax strawberries from May onward.
Several stalls sell hot food to eat standing up — a slab of tortilla, a slice of garbure (the hearty Gascon cabbage and duck soup-stew), or a paper cone of freshly fried chipirons. Pair any of it with a plastic cup of Tursan white wine poured straight from the producer's own barrel.
The Rhythm of a Real Gascon Morning
Arrive before 9:00 to see the market at its fullest and to beat the midday heat in summer. The atmosphere is convivial and loud — vendors know their regulars by name and negotiations over cheese rinds are conducted with theatrical seriousness.
After shopping, the café terraces ringing the square fill up with people comparing their hauls over a café allongé. It is, in miniature, the entire social logic of southwest France.
