La Braconne, Millau

Tucked into a narrow street in the old town, La Braconne has been feeding Millau locals and savvy visitors for decades with honest, generous Aveyronnais cooking. The aligot — elastic, garlic-scented mashed potato whipped with fresh Tomme cheese — is among the best in the region.

What to Order

Start with a slice of jambon cru de l'Aveyron with cornichons, then move to the signature aligot served alongside a thick saucisse de Toulouse or a slow-braised lamb shoulder from the Causses. The aligot is made tableside on busy evenings, the cheese stretching into long golden ribbons as the server lifts the pan — it's theatrical and delicious in equal measure.

The wine list leans heavily on Languedoc and Roussillon bottles at fair prices; ask the patron for a Faugères or a Marcillac rouge to match the richness of the meat dishes. Finish with a slice of flaune, the local sheep's-milk cheesecake flavoured with orange blossom.

Atmosphere and Practicalities

The dining room is low-ceilinged, stone-walled and candlelit at dinner — the kind of place where tables are close enough that you'll end up chatting to your neighbours about where they've hiked that day. Lunch is the better value option: a two-course formule with a glass of wine sits well under €20.

Book at least two days ahead for Friday and Saturday dinner in July and August; the terrace on the cobbled lane fills fast and locals fiercely defend their regular tables.
