Restaurant La Bergerie, Luz-Saint-Sauveur
La Bergerie is the kind of unhurried mountain restaurant that reminds you why French regional cooking is worth crossing a continent for. The menu pivots around Barèges-Gavarnie lamb — a protected AOC breed grazed on high-altitude pastures — cooked with the confidence of a kitchen that has been doing this for decades.
What to Order
The gigot d'agneau de Barèges-Gavarnie, slow-roasted for seven hours until the meat falls from the bone, is the dish the restaurant is known for. It arrives at the table in its roasting dish, fragrant with thyme and garlic, with a gratin dauphinois that has a proper golden crust.
Start with a garbure — the thick Gascon soup of preserved duck, white beans, cabbage and root vegetables that is the definitive Pyrenean first course. It is a meal in itself, but resist treating it as one.
For dessert, the gâteau Basque filled with black cherry jam from Itxassou is a nod to the Basque country just over the western ridge — dense, buttery and exactly right with a small glass of Jurançon.
The Setting
The dining room has exposed stone walls, low beamed ceilings and the kind of checked tablecloths that signal intent rather than kitsch. In summer a terrace opens onto a view of the valley and the first ridges of the cirque country.
