Every Wednesday morning the main square of Luz fills with stalls piled high with Pyrenean charcuterie, raw-milk cheeses, wildflower honey and hand-knitted wool goods — a vivid, aromatic snapshot of what this mountain valley actually eats and makes. It is small enough to cover in an hour but rich enough to keep you browsing far longer.

What to Buy

The undisputed star of any Pyrenean market is the local sheep's-milk cheese. Look for Bethmale, a semi-hard cow's-milk cheese from the neighbouring Ariège valley with a nutty, slightly funky depth, and for the softer, creamier Ossau-Iraty AOC made from Manech ewes grazed on high pastures.

Saucisson de montagne — coarsely ground, air-dried pork sausage — comes in variations flavoured with Espelette pepper, wild mushroom or walnut. Buy a whole one, wrapped in paper, and it will survive the journey home beautifully.

Local producers also sell jars of gentian-root liqueur, bilberry jam and Pyrenean wildflower honey that smells of altitude and thyme.

The Atmosphere

The market draws both tourists and locals doing their weekly shop, which keeps it honest. Farmers drive down from hillside farms in battered Citroën Berlingo vans and set up modest stalls beside professional charcutiers — the contrast is part of the charm.

A mobile crêpe van usually parks at one end of the square, and by 10 am the smell of buckwheat batter and salted butter competes pleasantly with the charcuterie. Grab one and eat it leaning against the stone fountain.
