La Cocina Aragonesa (Restaurant)

On Calle Cervantes in the old town, La Cocina Aragonesa has been serving honest Aragonese mountain food since the 1970s, earning a loyal following among Jaca locals and Pyrenean hikers alike. This is the place to try the full canon of the region's cuisine in a warm, wood-beamed room.

What to order

Start with migas a la pastora — breadcrumbs fried in olive oil with chorizo, bacon and a fried egg — a shepherds' dish that sounds simple and tastes extraordinary. Follow it with ternasco de Aragón, the IGP-protected milk-fed lamb roasted until the skin crackles and the meat falls apart; it is the signature dish of Aragonese cooking and La Cocina Aragonesa does it properly.

The wine list leans heavily on Somontano DO, the Pyrenean foothills appellation whose Tempranillo and Cabernet blends pair beautifully with the rich lamb. Ask the waiter for a half-bottle of Viñas del Vero if you are unsure where to start.

Atmosphere and timing

The dining room fills with locals from 14:00 on weekdays and from 14:30 on Sundays, when extended family lunches can last until 17:00. Booking is advisable on Sundays and during the ski season (December to March), when Candanchú and Astún skiers descend on the town.

The menú del día at lunch — three courses, bread and wine — is exceptional value at around €16 and changes daily according to market availability. It is one of the best-value set lunches in the Spanish Pyrenees.
