La Toque Blanche, Fréjus Old Town
On a narrow lane off Place Paul Vernet, La Toque Blanche has been feeding Fréjus locals and discerning visitors for over two decades with honest, market-driven Provençal cooking — think daube de boeuf slow-cooked in Bandol rouge, house-made tapenade and a bouillabaisse that must be ordered 24 hours ahead.
What to Order
The lunch formule (starter + main + glass of local rosé) at around €22 is one of the best-value meals in the Var. The soupe au pistou in summer — a thick vegetable soup finished with a vivid basil-and-garlic pistou — is as good a version as you'll find anywhere in Provence.
If you're visiting in autumn, ask about the menu gibier: wild boar from the Maures hills, roasted partridge and a chestnut-and-cep gratin that makes the season worth celebrating. The wine list leans heavily on Côtes de Provence and Bandol, with several bottles under €25.
The Setting and the Rhythm
The dining room is small — 30 covers — with exposed stone walls, mismatched Provençal pottery and a blackboard menu that changes with the market. Book at least two days ahead in July and August; the restaurant does not take walk-ins during peak season.
Lunch here follows the proper French rhythm: arrive at 12:30, expect to still be at the table at 14:30, and plan nothing strenuous for the afternoon. The owner, who doubles as sommelier, has an encyclopaedic knowledge of small-domaine Provençal wines and will happily guide you through the list.
