Restaurante Virrey Palafox
Sitting inside the historic Palafox inn on Calle Mayor, this restaurant has been feeding travellers and locals since 1875 and is the undisputed address in town for lechazo asado — milk-fed lamb roasted in a wood-fired clay oven until the skin crackles and the meat falls from the bone in clouds of steam.
The Signature Dish
Lechazo castellano is the defining dish of this stretch of the Duero valley, and Virrey Palafox sources its lambs from farms in the surrounding Soria countryside. The animals are slaughtered young, the meat is seasoned with nothing more than salt, water and lard, then slow-roasted in a horno de leña for several hours. The result is simultaneously simple and profound.
Order a quarter portion (un cuarto) if you are eating alone; a half portion between two people is the local standard. The kitchen sends out a small earthenware dish of roasting juices for dipping bread, which is arguably the best part of the entire meal.
Wine and Setting
The wine list leans heavily and correctly on Ribera del Duero, whose vineyards begin barely 20 km to the west. Ask the waiter for a bottle from Peñafiel or Roa de Duero in the 8–15 euro range and you will drink far better than the price suggests.
The dining room retains its original beamed ceiling, stone walls and heavy wooden furniture. There is no background music, no design concept and no Instagram-bait plating — just very good food served by people who have been doing this for generations.
