La Ferme de Biorne, Périgueux

A short drive from Périgueux in the rolling farmland of Périgord Blanc, La Ferme de Biorne is a working duck farm that offers visitors a rare, honest look at the production of foie gras — and then invites you to sit down and eat the results. It is one of the most authentic gastronomic experiences the region offers.

The farm visit and tasting

Owner and third-generation farmer Gilles Darnis leads small groups through the farm, explaining the full production cycle from rearing to the making of confits, rillettes, pâtés and whole foie gras. The visit is frank and informative rather than sanitised, giving visitors a genuine understanding of a practice that is central to Périgord's culinary identity.

The tasting that follows is generous: a spread of house-made terrines, magret de canard, duck confit and, of course, slices of whole foie gras on toasted walnut bread, accompanied by a sweet Monbazillac wine. Prices are far lower than buying the same products in Sarlat's boutiques.

Buying directly from the producer

The farm shop stocks the complete range of Biorne products, all vacuum-packed and suitable for travelling home in checked luggage. The duck fat (graisse de canard) alone is worth a kilo in your suitcase — it transforms roast potatoes in a way no supermarket substitute can replicate.

Book ahead by phone or email, especially in summer and around Christmas when the farm is busy with French visitors who know exactly what they are coming for. Visits are conducted in French but Gilles speaks enough English to guide international guests comfortably.
