Mercado del Azafrán (Saffron Market)
Every late October, Consuegra hosts one of Spain's most colourful harvest festivals centred on its famous saffron — the Fiesta de la Rosa del Azafrán — and the market stalls that line the old town streets are the best place to buy genuine La Mancha saffron directly from local growers.
Buying Real Saffron
La Mancha saffron (Azafrán de La Mancha) holds a protected designation of origin and is widely considered the world's finest, with a deeper colour and more intense flavour than cheaper Iranian or Indian alternatives. At the festival market, small producers sell hand-labelled tins and glass vials for far less than you'd pay in a city deli.
Look for threads that are entirely deep red with no yellow stamens mixed in — yellow dilutes the flavour and is a common sign of lower-grade product. Vendors are happy to let you smell before you buy.
Beyond Saffron
The market also overflows with local olive oil from the Montes de Toledo, artisan manchego cheese at various stages of curing, honey, marzipan and quince paste. It is essentially a one-stop larder for the best of Castilian produce.
Even outside festival season, the small Tienda del Azafrán on Calle Colón stocks certified local saffron year-round and the owner will explain the grading system with genuine enthusiasm.
