Marché de Chalon-sur-Saône (Place de l'Hôtel de Ville)
Every Friday and Sunday morning, the heart of Chalon erupts into one of the largest and most authentic markets in Burgundy. Stalls spill across Place de l'Hôtel de Ville and surrounding streets, loaded with Bresse chickens, Époisses cheese, Mâconnais goat's cheese, local wines and river fish.
What to Buy
Look for the maraîchers (market gardeners) from the surrounding Saône valley selling seasonal produce you simply won't find in a supermarket — white asparagus in spring, mirabelle plums in August, cèpe mushrooms in autumn.
The charcuterie stalls offer jambon persillé and rosette de Lyon alongside local producers' saucissons, and the cheese vendors are happy to let you taste before you buy.
Eating at the Market
Several rotisserie stalls roast whole chickens over wood fires, the fat dripping onto trays of potatoes below — grab a portion and eat it on a bench by the fountain.
The covered halles at the edge of the square house a handful of wine merchants and oyster sellers who open early, making a glass of Crémant de Bourgogne at 10 am feel entirely reasonable.
