What to Order
Start with a board of local affettati: speck Alto Adige IGP, lucanica di Cavalese (the valley's own coarse-ground pork sausage) and slices of aged Trentingrana with a drizzle of local honey — simple, but the quality of ingredients makes it sing.
The canederli al formaggio (cheese dumplings in butter and sage) are the house signature and arrive in a generously sized cast-iron pan; follow with strangolapreti, the spinach-and-bread gnocchi that are as comforting as the name ('priest-stranglers') is alarming.
Drinks and Dessert
The wine list features Teroldego Rotaliano DOC and Marzemino Trentino DOC — both underrated reds that pair beautifully with the robust mountain food and cost a fraction of what you'd pay for equivalent quality in Tuscany.
Finish with a slice of torta di fregoloti, the crumbly almond-and-grappa tart that is Trentino's answer to shortbread, served warm with a small glass of Vino Santo.
