Marché du Samedi, Place Carnot
Every Saturday morning the elegant Place Carnot in the Bastide Saint-Louis transforms into one of the most atmospheric food markets in Occitanie, spilling colour and noise across the fountain square from 7 am until around 1 pm. This is where Carcassonnais actually shop.
What's on the Stalls
Vendors from across the Aude département set up around 200 stalls selling violet-hued Cévennes onions, fat Corbières tomatoes, charcuterie from the Black Mountain, and the region's famous cassoulet beans — the lingot du Lauragais. Cheese stalls offer aged Roquefort, Pélardon goat's cheese and Tomme des Pyrénées.
The olive oil and tapenade vendors will press samples into your hands without asking; the honey producers from the Montagne Noire are equally generous. Budget at least 90 minutes to graze properly.
A smaller Tuesday and Thursday market occupies the same square but with fewer stalls; Saturday is definitively the one to prioritise.
Eating & Drinking Around the Market
The café terraces ringing Place Carnot fill with market-goers from 8 am; grab a table at Café des Deux Augustins and order a grand crème alongside a slice of fougasse studded with olives and lardons from the adjacent bakery.
Several stalls sell ready-to-eat food — grilled merguez, socca from Nice-origin vendors, and warm crêpes drizzled with local chestnut honey. It makes for an excellent breakfast with zero planning required.
