Start with the migas murcianas — fried breadcrumbs tossed with chorizo, panceta and grapes, a dish that sounds humble but arrives as a deeply savoury, texturally complex plate. Follow it with the guiso de trigo, a slow-cooked wheat and pork stew that is the defining comfort food of the Caravaca comarca.
For dessert, the arrope con nueces (a thick grape-must syrup poured over walnuts) is a medieval recipe that has survived unchanged in this part of Murcia for centuries — order it even if you're full.
