İskender Kebap at Kebapçı İskender

Every city has a dish it invented and Bursa's is İskender kebap — thin-sliced döner layered over torn pide, drowned in tomato sauce, crowned with cool yogurt and then, at the table, doused in sizzling clarified butter poured from a copper ladle. Eating it at the source is non-negotiable.

The Dish That Started It All

İskender Efendi created this combination in Bursa in the 19th century, and Kebapçı İskender — run by his descendants ever since — remains the most famous address to eat it. The restaurant occupies a large wooden Ottoman building in the historic city centre, its interior walls lined with carved wooden panels, old photographs and colourful tile-clad columns.

The menu at Kebapçı İskender contains exactly one main course: İskender kebap, done to a standard that has not changed in generations. The meat is succulent, the yogurt cold and generous, and the moment the waiter arrives with a small copper pot of freshly melted butter to pour tableside is genuinely theatrical.

The Full Bursa Food Picture

İskender is the headline act but Bursa's food scene has strong supporting players. Pideli köfte — grilled meatballs on buttered bread — is the city's other great lunch staple, found at simple lokantalar across town. For something sweet, kestane şekeri (whole candied chestnuts in glossy syrup) are the city's most beloved gift-box item, sold at confectioners throughout the bazaar district.

For a more relaxed meal with a view, Hacı Dayı at Tophane Park serves a broad range of kebabs and meze with panoramic city sightlines — a local favourite for long, unhurried lunches.

When and How to Go

Kebapçı İskender is open daily from roughly 11am to 9pm and is centrally located near the covered bazaar. It can be difficult to get a seat at peak lunch hours, so aim for 11:30am or after 2pm. The price is moderate by any standard — this is still a working-city lunch spot, not a tourist trap.
