Osteria Il Podestà
Tucked just off Piazza Silvestri on Via Crescimbeni, Il Podestà is the kind of small, family-run osteria that Umbria does better than anywhere else in Italy — stone vaulted ceiling, hand-written daily menu, and a kitchen that takes local ingredients with quiet, unshowy seriousness.
What to Order
The strangozzi al tartufo nero di Norcia is the dish to start with: thick hand-rolled pasta ribbons dressed in nothing but local black truffle, olive oil and a whisper of garlic. It arrives in a generous mound and smells extraordinary. In autumn the truffle is fresh-shaved at the table; in other seasons it comes as a dense paste that is almost equally good.
Follow it with piccione in umido — slow-braised wood pigeon with juniper and Sagrantino wine — a dish that appears on Umbrian tables going back centuries and is handled here with genuine skill. The local Montefalco Rosso by the carafe is the correct wine pairing and costs very little.
Practicalities
The osteria seats around 30 people across two low-ceilinged rooms; book ahead for Friday and Saturday evenings, when it fills with Italians from Foligno and Perugia as well as visitors. Lunch on a Tuesday or Wednesday is the easiest time to walk in without a reservation.
Prices are honest: a full meal with wine typically runs €28–38 per person. Cash is preferred though cards are accepted. The owners speak enough English to guide you through the menu but the experience is more fun if you point and trust them.
