Restaurante El Fogaril
Tucked into a stone-vaulted dining room on Calle Mayor, El Fogaril has been the benchmark for Benasquese cooking for decades. This is the place to understand what Aragonese mountain cuisine actually tastes like when done with care and local ingredients.
What to Order
Start with the migas a la pastora — breadcrumbs fried with panceta, chorizo and a fried egg — a shepherd's dish that sounds humble and tastes extraordinary.
For mains, the ternasco de Aragón (IGP-certified Aragonese suckling lamb) roasted with wild herbs from the valley is the signature; the skin crackles, the meat falls away, and the smell alone is worth the trip.
Wine and Atmosphere
The wine list leans into Somontano DO, the Aragonese foothills appellation just south of the Pyrenees — ask the staff to recommend a Parraleta varietal if they have one open, as it is rarely found outside the region.
The dining room, with its exposed granite walls and low timber ceiling, fills up fast on weekends in July and August; reservations are essential and worth making well in advance.
