Start with the antipasto della tradizione: a procession of small plates including fave e cicoria (broad-bean purée with bitter wild greens), grilled lampascioni (wild hyacinth bulbs), and a cloud of fresh ricotta drizzled with local olive oil. It is a textbook lesson in Puglian cucina povera elevated without losing its soul.

For a main, the orecchiette al ragù di agnello (lamb ragù) uses meat from the Murge plateau and a slow-cooked sauce that clings to every ear-shaped hollow. Pair it with a glass of Primitivo di Manduria for a full southern Italian moment.
