Porchetta di Velletri
Velletri has its own fiercely defended porchetta tradition, distinct from the more famous Ariccia version — seasoned with wild fennel, garlic and black pepper, roasted whole and sold from silver-sided vans parked near the market and from dedicated rosticcerie in the old town. Where to Find the Real Thing
The most reliable spot is the cluster of porchetta vans that appear on Friday market days near Piazza Cesare Ottaviano Augusto, where third-generation porchettari slice to order from whole roasted pigs laid out on stainless steel counters. Arrive between 10 and 11 am when the pork is freshest and the crackling still shatters.
For a sit-down experience, several trattorie in the centro storico serve porchetta as a secondo alongside contorni of roasted Colli Albani potatoes and braised cicoria — the full Castelli Romani lunch that costs a fraction of what Rome charges for half the quality.
The Velletri Style and What Makes It Different
Unlike Ariccia's porchetta, which leans heavily on rosemary, the Velletri preparation uses a more generous hand with wild fennel pollen and coarsely cracked black pepper, giving the meat a slightly aniseed warmth that lingers pleasantly. The skin is scored more deeply, producing thicker, more substantial crackling.
Local bakers supply the unsalted pane di Velletri — a round, chewy loaf with a thick crust — specifically designed to absorb the porchetta's juices without going soggy, and the combination of the two is one of the most satisfying street-food experiences in all of Lazio.
