Ristorante Trippini, Civitella del Lago
Perched on the rim of a cliff above Lake Corbara near Orvieto, Trippini has been feeding Umbrians with fierce local pride since 1887. The menu reads like a manifesto for the region: hand-made umbricelli with truffle, pigeon slow-roasted with juniper, and a wine list dominated by local Orvieto Classico Superiore.
What to order
Start with the bruschetta topped with lardo di Colonnata and local honey — the contrast of fat and sweetness sets the tone for a meal that is simultaneously rustic and considered. The umbricelli al tartufo nero is the signature: thick, hand-rolled spaghetti coated in a sauce of black Norcia truffle that is earthy without being overwhelming.
The piccione (pigeon) main course is the dish that keeps food writers returning. Slow-roasted with wild herbs and served with a reduction of Sagrantino wine, it is one of the most distinctly Umbrian plates you will eat anywhere.
Setting and booking
The dining room has a terrace cantilevered over the cliff edge, with Lake Corbara shimmering blue-green below and the wooded hills of the Tiber valley stretching to the horizon. On a clear spring evening, the light on the water is extraordinary.
Civitella del Lago is 15 km east of Orvieto. Book at least a week ahead for weekend tables; the restaurant is closed on Mondays and Tuesday lunchtimes.
