Mercado Municipal de Tudela
Tudela sits at the centre of La Ribera, a fertile river plain that produces some of Spain's most celebrated vegetables, and the covered municipal market is where chefs and home cooks come to argue over the finest specimens. Come on a Saturday morning and the stalls overflow with white asparagus, cardoons, piquillo peppers and the famous Tudela artichoke.
What to Buy and Taste
The white asparagus of Navarre (espárrago de Navarra IGP) is thicker, more tender and less bitter than the imported alternative — buy a jar of locally tinned spears or, in spring, a fresh bundle to cook that evening. Alongside them you'll find menestra de verduras kits: pre-prepped mixes of artichoke hearts, broad beans, peas and asparagus tips that form the backbone of the region's most iconic dish.
In autumn the market fills with local peppers being roasted over gas burners right on the street outside — the sweet, smoky smell drifts two blocks in every direction. Vendors sell them charred and peeled in vacuum bags, ready to drizzle with olive oil and eat with salt cod.
The Market's Rhythm and Surroundings
The market building, a handsome early-20th-century iron-and-brick structure on Calle Gaztambide, operates Tuesday to Saturday mornings. Saturday is the main day when outdoor stalls spill onto the surrounding streets and farmers from the Ebro valley bring produce they've harvested that morning.
After shopping, the tapas bars on nearby Plaza de los Fueros fill up with locals ordering a caña and a pincho of tortilla — it's an entirely authentic slice of Navarrese daily life that no tour bus stops for.
