Mercado de Abastos de Soria
Tucked into a handsome early-20th-century building on Calle Alberca in the heart of Soria, the Mercado de Abastos is a working neighbourhood market where butchers still hang whole lambs and mushroom vendors pile baskets with boletus gathered from the nearby Pinar Grande pine forest. It is the most honest introduction to the local food culture you will find.
What to Buy
The star product is lechazo — milk-fed lamb from the Churra breed — sold by vendors who can tell you exactly which village the animal came from. Alongside it you will find morcilla de Soria (a delicate blood sausage spiced with onion rather than rice), local honey and artisan cheeses from the surrounding villages.
From late September through November the mushroom stalls are extraordinary. Boletus edulis, níscalos (saffron milk caps) and rebozuelos (chanterelles) arrive fresh each morning from the Pinar Grande, and prices are a fraction of what you would pay in Madrid.
Atmosphere and Timing
Saturday morning is the liveliest session, when farmers from surrounding villages bring seasonal produce and the coffee bar inside fills with locals catching up over a cortado and a pincho of tortilla. The market is small enough to feel genuinely local rather than touristic.
Even if you are not self-catering, walking the stalls is worthwhile purely for the education in Soriano ingredients. Stallholders are accustomed to curious visitors and most are happy to offer a taste.
