Casa Efigenia, Las Hayas
An hour's drive up into the laurel forest, the village of Las Hayas hides what many food writers consider the most authentic table in the Canary Islands: Casa Efigenia, where the late Efigenia Martín's family still serves a set vegetarian lunch of Gomeran dishes that has barely changed in decades. A Meal Rooted in the Land
The menu is fixed and vegetarian by tradition: expect a procession of small dishes including potaje de berros (watercress stew), papas arrugadas with mojo, gofio escaldado, fresh salads dressed with local olive oil, and a dessert of bienmesabe (almond cream) or the house cake sweetened with palm honey.
Everything on the table is grown or produced on the island, much of it from the surrounding hillsides. The flavours are simple, honest and deeply satisfying in a way that makes you realise how much modern cooking overcomplicates things.
The Setting and the Story
The dining room is a converted farmhouse with low ceilings, checked tablecloths and framed photographs of the family going back generations. Sitting there feels like being invited into someone's home rather than eating in a restaurant, because that is essentially what it is.
Efigenia herself became something of a culinary legend in the Canaries before her passing; the family continues her work with the same produce-first philosophy and the same unhurried pace. Allow two hours and savour every bite.
