What ends up on your plate

Expect dishes that read simply but arrive with precision: a terrine of local duck confit with cornichons and toasted sourdough, a fillet of sandre (pike-perch) from the Charente with beurre blanc and new-season vegetables, and a dessert of clafoutis made with whatever stone fruit the market offered that week.

The kitchen leans heavily on the Saintonge terroir — pineau des Charentes appears in sauces, Cognac flames the occasional dish, and the cheese board is a tour of the Charente's small-farm chèvre producers.
