What's on the Plate

The kitchen sources Charolais beef from farms in the Marne valley, pike-perch from Lac du Der and Langres cheese from plateau producers — ingredients that rarely appear together but make complete geographical sense when you look at a map. The signature dish, a slow-braised joue de bœuf with smoked potato mousseline and pickled mushrooms, has been on the menu for years because nobody has asked for it to leave.

Starters lean seasonal: expect a chilled Langres velouté with walnut oil in autumn, or white asparagus with a Champagne sabayon in May. The wine list prioritises Champagne and Burgundy, with a short but intelligent selection of growers' Champagnes by the glass.

Booking & Atmosphere

The dining room occupies a converted 19th-century forge building — exposed stone walls, industrial ironwork details and warm pendant lighting that makes the space feel simultaneously historic and contemporary. Tables are well-spaced and the noise level stays at conversation-friendly even on busy Friday evenings.

Reservations are strongly recommended for Friday and Saturday dinner. The set lunch menu (two courses plus coffee) represents exceptional value and is popular with local business lunches, so book ahead for that too.
