Every Saturday the centre of Rethel transforms into an aromatic open-air theatre of local produce, with farmers from the surrounding Ardennes villages setting up stalls by 7 am. This is the real weekly pulse of the town — less touristy than the big Reims markets and all the more authentic for it.

What to Buy and Where to Look

The market clusters around the central streets near the town hall and spills along the Aisne riverside, with the freshest stalls arriving earliest. Look for raw-milk cheeses from small Ardennes farms, jars of honey from beekeepers working the Aisne valley wildflowers, and seasonal vegetables that change dramatically week to week.

Charcuterie is a particular strength: dried sausages, pâtés en croûte and smoked hams from the Ardennes forest dominate one end of the market and make excellent picnic supplies for a riverside afternoon.

The Andouillette de Rethel

Rethel is nationally famous for its andouillette — a coarse-cut tripe sausage with a fierce, funky aroma and devoted fans across France. Several market stalls sell it fresh, and a few charcutiers will vacuum-pack it so you can carry it home on the train without alarming fellow passengers too badly.

The andouillette de Rethel carries a strong local identity and has been celebrated here since at least the 18th century. Grilled and served with mustard and frites, it is the dish that defines this corner of Champagne — try it at a café table near the market before the stalls pack up around noon.
