Osteria delle Travi, Bari
Tucked into a vaulted stone room in Bari Vecchia, Osteria delle Travi — known locally as 'Il Buco' — is the kind of place that has been feeding Bari families for decades without ever needing a marketing campaign. The menu is a masterclass in Puglian cucina povera: honest, seasonal and deeply satisfying.
What to Order
Start with the ciceri e tria — a hypnotic dish of chickpeas with half the pasta boiled and the other half fried crisp, a recipe that dates to Arab influence in medieval Puglia. Follow it with orecchiette alle cime di rapa, the region's signature pasta with bitter turnip tops, anchovy and chilli.
The secondo to order is agnello al forno (slow-roasted lamb) when it's on, or the polpo alla pignata — octopus slow-cooked in a terracotta pot with tomatoes and olives until it falls apart. The house wine is local Primitivo, served in ceramic jugs and priced by the quarter-litre.
The Setting and the Ritual
The restaurant occupies a single low-ceilinged room with rough stone walls, mismatched wooden chairs and a blackboard menu that changes daily based on what arrived at the market that morning. There is no website and the phone is answered sporadically — just turn up.
Lunch is the main event here, as it is across Puglia: the kitchen fires up around 12:30 pm and by 1 pm every table is full of locals. Budget around €25–30 per person for a full three-course meal with wine, which by any measure of value is extraordinary.
